We have one for you! Healthy Chicken Lettuce Wraps meet all the requirements for a fun family dinner. They are easy to make, fun to eat, and healthy too! Your whole family will enjoy this meal. Serve them with a side of steamed organic edamame and some broccoli sauteed in a little soy sauce, honey, and fresh orange juice. Your kids will thank you (and so will your hubby!).

Healthy Chicken Lettuce Wraps

In large frying pan, saute 1 pound (2 lbs if you have a large family) of ground chicken breast, 3 chopped green onions, 1 can of diced water chesnuts, a clove of fresh crushed garlic, and some fresh ginger. You may also add chopped zucchini or mushrooms at this point.

Cook until chicken is no longer pink.

Add 3 tbs of soy sauce or coconut aminos, 1 tsp raw honey, and a splash of rice wine vinegar or white vinegar. Saute for 3-5 minutes.

Add 1/4-1/2 cup of Hoisin Sauce to taste (found in the Asian section of your grocery store). Saute for 3-5 more minutes.

Spoon chicken mixture into separated lettuce leaves. Roll and enjoy!

**FACT – Carob is a fruit that comes from the Carob tree. This legume is found is very high in fiber and calcium.  Carob also has therapeutic uses. It is known to halt serious cases of diarrhea in adults, infants, and animals. One French physician successfully reversed kidney failure with carob.

Leave It: Haagen-Dazs Chocolate Peanut Butter (1/2 cup) – 360 calories, 220 from fat: Fat 24 g – Carbs 27 g – Sugar 24g – Protein 8g
