Not only are these Santa Fe Chicken Bowls perfect for meal prep, but they are a great healthy alternative to a traditional Mexican restaurant and they’re super kid-friendly.

The hardest part of this whole recipe is probably turning on the crock-pot. Seriously, these Santa Fe Chicken Bowls are my new favorite dinner staple, especially during the summer! After seasoning the chicken and placing it in the crock-pot, you’ll be free for the next 6 to 10 hours (depending on how high you set the temperature). If you go the Instant Pot route, you have a quick dinner in 25 minutes. Either way, these Santa Fe Chicken Bowls are delicious and my favorite type of cooking: easy!

Once the chicken is cooked, feel free to serve it over your choice of mixed greens, rice or roasted sweet potato. Add your favorite toppings to make it your own. Kids love this part because they get to be hands-on with their creation. It’s also perfect for the picky eaters out there because they get to choose what they’d like on top.

One of my favorite toppings is Greek yogurt. It gives you an extra boost of protein and tastes just like sour cream. Personally, I like to go for the full-fat version because it tastes a lot better and is healthier overall!

I’m also a huge fan of Siete chips. These chips are grain-free, processed oil–free and full of all the good stuff we want in our diets, like 100% healthy ingredients and fiber. They are great for an added crunch, plus they are suitable for gluten-free and gluten-sensitive eaters. Definitely a staple in my kitchen and in this Santa Fe Chicken Bowl recipe!

Santa Fe Chicken Bowls Ingredients:

Santa Fe Chicken:

24 oz. or 1½ lbs. chicken breast

14.4-oz. can diced tomatoes with mild green chiles

15-oz. can black beans, rinsed and drained

8 oz. frozen corn

14.4 oz. bone or chicken broth

¼ cup chopped sweet onions or scallions

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. cumin

1 tsp. cayenne pepper, to taste

Salt, to taste

For the Bowls:

½ cup full-fat Greek yogurt

1 avocado

1 bag Siete tortilla chips

Serve over mixed greens, rice or sweet potato

Directions:

Season chicken with salt and place in crock-pot or Instant Pot. Add all remaining Santa Fe Chicken ingredients. In a crock-pot, cook on high for 6 hours or on low for 10 hours; in an Instant Pot, cook on high pressure for 25 minutes, using either quick or natural release. Once the chicken is cooked, it’s time to build your bowl! Serve chicken over your choice of mixed greens, rice or roasted sweet potato. Top it off with one serving of crinkled Siete tortilla chips, 2 tbsp. Greek yogurt and ¼ avocado.

We have one for you! Healthy Chicken Lettuce Wraps meet all the requirements for a fun family dinner. They are easy to make, fun to eat, and healthy too! Your whole family will enjoy this meal. Serve them with a side of steamed organic edamame and some broccoli sauteed in a little soy sauce, honey, and fresh orange juice. Your kids will thank you (and so will your hubby!).

Healthy Chicken Lettuce Wraps

In large frying pan, saute 1 pound (2 lbs if you have a large family) of ground chicken breast, 3 chopped green onions, 1 can of diced water chesnuts, a clove of fresh crushed garlic, and some fresh ginger. You may also add chopped zucchini or mushrooms at this point.

Cook until chicken is no longer pink.

Add 3 tbs of soy sauce or coconut aminos, 1 tsp raw honey, and a splash of rice wine vinegar or white vinegar. Saute for 3-5 minutes.

Add 1/4-1/2 cup of Hoisin Sauce to taste (found in the Asian section of your grocery store). Saute for 3-5 more minutes.

Spoon chicken mixture into separated lettuce leaves. Roll and enjoy!

These tacos are the perfect get-ready-for-beach-season meal. Flaky, protein-filled fish topped with mango salsa and wrapped in a crunchy guilt-free lettuce leaf. It’s flavorful, satisfying and will keep you on track with your fitness goals.
Servings: 8

Here’s what you need…

  • 4 (3.5oz) Cod Fillets
  • 1/2 cup tropical vinaigrette
  • 1 lime
  • 4 large pieces of butter lettuce
  • 4 Tablespoons guacamole
  • 1 cup shredded cabbage
  • 4 Tablespoons mango salsa
  1. Marinate the cod fillets in dressing for 20 minutes.
  2. Preheat oven to 375 degrees F. Grease a pan with olive oil.
  3. Place marinated cod in prepared pan, cut lime in half and squeeze juice over cod. Bake for 15 minutes.
  4. While cod is baking, separate leaves from lettuce, being careful to keep them intact. Assemble individual tacos by putting a tablespoon of guacamole on a lettuce leaf, topped with 1/4 cup of cabbage.
  5. Once fish is done, change oven to broil for a few minutes, watching closely until top is browned. Remove from oven.
  6. Top each prepared taco with a piece of fish, a spoonful of salsa, and a slice of the remaining lime half.

Nutritional Analysis: One serving equals: 141.5 calories, 2.5 fat, 61mg sodium, 4.8g carbohydrate, 1.2g fiber, and 23g protein.
